Our new executive chef, baker & pastry chef, Richard White, has been our head baker since 2018 creating artisanal breads and homemade gluten free breads that were otherworldly. 

Now we are ready for him to take his expertise in the culinary world to the next level at ECO for our new 2023/2024 season! 

Think innovative dishes made from locally sourced ingredients with authentic principles of open fire cooking, homemade noodles, true sourdough and so much more. Honouring what our land and seas have gifted us with the help of our hard-working local farmers & fisherfolk, bringing the gastronomic experience in Barbados to a new high.

Richard completed his certification at Sutter Bakery in Basel, Switzerland.   He quickly gained popularity on island after selling his homemade breads, quiches, desserts and more at local venues. 

Outside of ECO, Richard is a true artist at heart, creating magic with his hands- evident by our own ECO cob sauna in our gully, made by Richard himself! He is now teaching his skills to others on island. And when he actually has free time, he enjoys time with his family, including a new granddaughter, and of course his other passion- music. 

Manuela draws inspiration from fresh ingredients that nourish and energize body, mind and soul.

Manuela Scalini is an international wellness expert and professionally trained plant-based and certified Raw Food Chef.  She has spent the past eight years traveling the world teaching culinary workshops and hosting yoga + wellness retreats, but like Kyle + Maryam, fell in love with Barbados and made it her home. Manuela weaves her cosmopolitan Brazilian heritage with locally foraged and seasonal flavors to create beautifully innovative dishes. By combining her international influences with fresh tropical flavors, Manuela has created an original menu that draws rave reviews from ECO’s guests.

You’ll find both traditional and artisanal cocktails at our ECO Bar, where cool sea breezes are regularly on tap. There’s nothing quite like an East Coast sunset – the cotton candy skies reflect on the water, creating an incredible surrounding light. As the moon rises, the nightlife here runs at a quieter pace – you’ll have the sound of the waves, some good stories shared with fellow guests and a sky full of stars to entertain you. From time to time we’ll feature low-key live music and instruments are available if you’re up for a spontaneous jam session.

ECO Green Smoothie Bowl | Local Bajan Seasonal fruit and greens, superfood toppings

Lobster Eggs Benedict | Heaped Caribbean lobster from Bajan waters, fresh bread, Bajan farmed rocket, red onion, and tomato, perfectly poached local free range egg, herb hollandaise.

From seaside ceremonies and breezy cocktail receptions to candlelit dining and dancing under the stars, your celebration at ECO will be simply unforgettable. The ECO Kitchen + Bar will collaborate with you to create an innovative menu showcasing locally sourced ingredients from farm and sea, as well as unique signature cocktails and bar menus for your guests. We can accommodate parties of up to 100 people; you can also book our ten beautiful guest rooms to extend the celebrations throughout the weekend.
