Our Kitchen Is Driven By A Passion For Sourcing Fresh Local Ingredients
The ECO Restaurant & Pantry supports our aim to live a healthy, sustainable lifestyle with a primarily plant-based and organic menu. Our Le Cordon Bleu-trained Executive Chef Alisha Dawn Stoute has collaborated with renowned international chef Manuela Scalini to create inventive, clean and wholesome dishes that offer a new take on Barbadian cuisine. Keeping to ECO’s excellence in gastronomy, locally known baker- Richard White- has joined our team to deliver the utmost excellence in freshly baked breads and pizza dough on the island!
The primarily plant-based menu uses fresh ingredients including organic fruits, vegetables and dairy as well as cage-free eggs from our neighboring farms, fresh seafood caught in nearby waters and nourishing greens foraged on-island. We’re proud to support local businesses and individual growers; working together with our fishermen and farmers, we’re creating a true farm and sea-to-table restaurant experience. We have now started our very own off site organic gardens, ensuring a fresh harvest of the most nutritious provisions right onto your plate.
Handcrafted snacks and treats are available throughout the day in the ECO Pantry.
We’re also happy to prepare a picnic basket to fuel your daily adventures, and can pre-stock your fridge or prepare a special detox menu on request.
Alisha gained exposure to the Barbados restaurant scene during an early singing career, and through her own initiative and self-taught skills, transitioned to a career as a private cook in a West Coast Villa. Her passion for the culinary arts led to her formal training at Le Cordon Bleu in Canada, where she earned a Grande Diplome in Cuisine and Pâtisserie. Alisha has recently returned home to Barbados, where her journey led her to ECO. Her respect for ingredients, researching their origins and how to best utilize them, has served her craft well, resulting in artistic dishes filled with color, texture and exceptional flavor.
Manuela Scalini is an international wellness expert and professionally trained plant-based and certified Raw Food Chef. She has spent the past eight years traveling the world teaching culinary workshops and hosting yoga + wellness retreats, but like Kyle + Maryam, fell in love with Barbados and made it her home. Manuela weaves her cosmopolitan Brazilian heritage with locally foraged and seasonal flavors to create beautifully innovative dishes. By combining her international influences with fresh tropical flavors, Manuela has created an original menu that draws rave reviews from ECO’s guests.

You’ll find both traditional and artisanal cocktails at our ECO Bar, where cool sea breezes are regularly on tap. There’s nothing quite like an East Coast sunset – the cotton candy skies reflect on the water, creating an incredible surrounding light. As the moon rises, the nightlife here runs at a quieter pace – you’ll have the sound of the waves, some good stories shared with fellow guests and a sky full of stars to entertain you. From time to time we’ll feature low-key live music and instruments are available if you’re up for a spontaneous jam session. You might even get Chef Alisha to come out and sing a song or two – she’s an incredibly talented singer!

Lobster Eggs Benedict | Heaped Caribbean lobster from Bajan waters, fresh bread, Bajan farmed rocket, red onion, and tomato, perfectly poached local free range egg, herb hollandaise.
Tuna Tartare Nicoise | Local Yellowfin, green bean, cage free egg, briney sea purslane, crispy onions, with breadfruit crisps

The ECO Pantry provides our guests with a convenient option for snacks, drinks and foods-to-go under a ‘cash + carry’ system. Our weekly offerings are listed at both our reception desk and the ECO Bar, including chia bowls, smoothies, elixirs and salads as well as baked treats, power balls and hard-boiled eggs. Enjoy right here at ECO, or pack a picnic lunch for one of your daily adventures. We also offer coffee, tea, soft drinks, wine and selected liquors. We’ll gladly stock your fridge with your preferred selections prior to your arrival; drop us a note and we’ll provide you with the current menu.
